The Bite was Tumalo’s first full-service food cart lot and tap house, and one of Central Oregon’s early food cart developments. It quickly became a local favorite, and its
reputation has made it a regional destination and a valued community amenity. Design began in late 2015, construction was completed in September of 2016. In 2018, the Bite was expanded to include the neighboring property to accommodate additional food carts and an upgraded on-site waste water treatment facility. Given the site’s close proximity to the Deschutes River, careful waste water treatment was a strict requirement. This necessitated close coordination between architect, engineers, and the Oregon State Department of Environmental Quality. In 2024, The Bite partnered with
Rivian to install fast chargers to support wider EV travel, particularly between the Central Oregon region and Portland and the Willamette Valley.
